Chocolate Pecan Kisses
 
1 egg white
1/3 cup sugar
1/2 cup miniature semisweet 
   chocolate chips
1/2 cup chopped pecans
 
Place the egg white in a small bowl.  Let stand at room temperature for 30 
minutes.  Beat on medium speed until soft peaks form.  Gradually beat in the 
sugar, 1 tablespoon at a time, on high speed until stiff peaks form.  Fold in 
the chocolate chips and the pecans.  Drop by rounded teaspoonfuls 2 inches 
apart onto parchment paper-lined baking sheets.  Bake at 250 F for 40-45 
minutes or until firm to the touch.  Turn the oven off and let the cookies dry 
in the oven  for 1 1/2 hours.  Carefully remove the cookies from the parchment 
paper.  Store in an airtight container.   Makes 1 1/2 dozen
