Flavored Butters

 

Sage and Black olive Butter

 

· 1/2 cup unsalted butter, softened
· 8 to 10 fresh sage leaves, chopped
· 2 to 3 tbsp. black olives in oil, drained and coaresely chopped
· 2 cloves garlic, minced

 

 

CILANTRO AND GREEN CHILI BUTTER

 

Ingredients :

· 1/2 cup unsalted butter, softened 
· 1/4 cup chopped fresh cilantro
· 3 scallions, thinly sliced 
· 2 cloves garlic, minced
· 1/4 green chili, or to taste, finely chopped
· dash of lime
· pinch of grated lime zest
· salt, to taste

 

 

Basic shallot Butter

Ingredients :

· 1/2 cup unsalted butter, softened
· dash of lemon juice
· 2 shallots, finely chopped
· salt and black pepper, to taste

 

ROSEMARY AND MUSTARD BUTTER

Ingredients :

· 1/2 cup unsalted butter, softened
· 1 tbsp. Dijon mustard 
· 2 cloves garlic, minced
· 2 tbsp. chopped fresh rosemary 
· salt and black pepper, to taste

 

SUNDRIED TOMATO AND BASIL BUTTER

Ingredients :

· 4 cloves garlic, minced
· 1/2 cup unsalted butter, softened
· 5 to 8 sun-dried tomato in oil, diced, plus 1/2 tsp. of the oil
· 3 tbsp. finely chopped fresh basil leaves 
· salt and black pepper, to taste
