Lemon Loaf
1 2/3 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup finely chopped walnuts (optional)
1/3 cup canola oil
1 cup granulated sugar
2 eggs
2 teaspoons grated lemon zest
1/2 teaspoon vanilla
2/3 cup milk
Directions:
Preheat oven to 350 F. Lightl
This is a great recipe. If you like a strong lemon flavor, as I do,
you might try substituting 1 teaspoon lemon extract for the vanilla.
