Yield 8 accompaniment servings 2 cups whole milk 1 tablespoon corn starch 1/8 teaspoon ground red pepper 1 bag 32 ounces frozen diced hash brown potatoes southern style Half teaspoon salt 1 cup shredded Italian cheese blend (half 8 ounce package) 350 In large microwave safe bowl, mix milk corn starch and red pepper. Heat in microwave on high 6-7 minutes or until mixture boils and thickens slightly stirring once. Stir in frozen potatoes. Cook on high 10-11 minutes or until potatoes are tender stirring once. Stir in salt. Spray 1-1/2 or 2 quart baking dish with cooking spray. Spoon half of potato mixture into dish. Top with ¾ cup cheese. Spoon remaining potato mixture over cheese. Sprinkle with remaining cheese. Bake in oven uncovered 55-60 minutes or until top browns slightly. Life isn't about waiting for the storm to pass; It's about learning to dance in the rain.
