This is one I just threw together one day, and I think it's my favorite.  It's 
plain and simple

4 eggs
1/2 cup sugar
cinnamon, nutmeg, cloves to your taste
3 cups milk
6 to 8 slices bread, torn

Directions

In a marge bowl, beat eggs well, then add sugar and spices and mix well.
add milk and the bread, and mix well.  Let stand for a while to let the bread 
absorb the liquid, then pour into a buttered 8/12 baking dish.
Bake at 350 for 30 to 45 minutes, or until set in center.

NOTE:  I also like to add about a cup of raisins, if I have them.  Also, if 
using wheat bread, you can use brown sugar.
