I have updated the version of vim on cygwin.com to 6.4-3. This version contains a fixed xxd, which does not create the text output files always using CRLF line endings anymore, but rather honors the mount mode (text/binary) of the underlying mount point, the output file is written to. Output to stdout is now always using LF line endings.
To update your installation, click on the "Install Cygwin now" link on the http://cygwin.com/ web page. This downloads setup.exe to your system.
