From this I learned, that I should probably not use
/opt/photo the way of /usr or /usr/local, but instead put
darktable in it's own path to be able to drop it easily.

can't be kept current. And you have
quite a pace on this project. :)
So one might consider as well whether it would be ok to have 90% in
german and the missing parts in english ("better than nothing till they
are done" type of approach).

hortcut also seems to access the keywords differently. Looks like some
cleanup to be necessary here. It should all work the same, doen't it?
