One clarification:
When I create a jffs2 filesystem on /dev/mtd2 using the process
described in:

The kernel in /dev/mtd1 is no longer bootable. U-boot does not recognize
the kernel as valid anymore.

I could be wrong - but I don't think you should be formatting the NAND
with a filesystem for the kernel image.
In the past when I've programmed a new image into flash from a running
system I've used flashcp after erasing the partition.
