You should be able to boot from a live cd and run:
mount /dev/sda1 /mnt
mkdir /mnt/srv/old-install
mv /mnt/* /mnt/srv/old-install/
umount /mnt
...and then do the Debian Stretch installation without bothering with a
backup/restore, as it will all be kept there in the /srv/old-install
subdirectory.
