Then fix your other software. Wine cannot freeze your system cold on its
own unless you have buggy system software, insufficient hardware (not
enough RAM), or a system misconfiguration (no swap space). If *any*
application could, Wine or not, it would be a huge security hole in the
system. If it's the system software that's at fault, I would guess buggy
graphics drivers or something, probably badly set up ATI crap. In any
case, there's nothing I can do about it.
