The reason that the problem occured now could be found.
The USB keyboard must be plugged in one special USB-port to be found for grub.
It does not work on other USB-ports.
The keyboard has been disconnected to install some hardware.
Now it seems to be plugged in the same port as before.

I reported it upstream already - there seem to be always more of this
kind of issues.
The __packged change is needed, but I replaced the variable changes by
the following until upstream fixes the rest into a new release.
That gets you building again.
