Hi,
I think this report should be closed. The problem was caused by my bad
apache2-config.
Today I changed /etc/apache2/conf.d/charset from
AddDefaultCharset UTF-8
to
AddDefaultCharset iso-8859-1
and restarted apache. Now it works like expected.

Sorry, but the directory /var/log/ejabberd/ is empty (see original bug
report).
