Nevertheless, I'd find a way to fix it:
- the file exist into Debian source repository
- so download
http://deb.debian.org/debian/pool/main/g/gnucash/gnucash_5.1.orig.tar.xz
see https://packages.debian.org/source/trixie/gnucash for information
