When importing pictures from the local filesystem in gallery (Adding photos
-> URL -> /foo/bar/directory) I'm given the choice to fill the captions with
either of:

Use file creation date/time stamp.
Set photo captions with file capture times.

Choosing either of them seems to cause my captions to have the *current*
time and date rather than the timestamp on the file.
