Hi! I also do not want the snd-*-oss modules loaded. Some apps first try OSS before trying ALSA and then the whole ALSA dmix setup or PulseAudio in my case fails because one app has /dev/dsp opened. Additionally, I do not have any worthwile OSS only apps, though some games are OSS only.
So time after time I have to prevent dpkg from modifying /etc/modprobe.d/alsa-base where I commented out the snd-*-oss lines and merge the changes by hand (and this happens a lot). What about a "ALSA only" or "ALSA with OSS emulation" option in linux-sound-base and a small test in the snd-*-oss lines?
