The default setup of a FAI install server should recommend the inet daemon, not because of tftp, but because the install clients will set their clock at the very beginning of the installation. This can be done using ntp or the time service of the inetd. I recommend the useage of time instead of ntp, because it simple to set up and there's no need for a very exact clock during the installation.
