That's because it's i386-only and wine-unstable:amd64 should install wine-bin-unstable:i386 (well, when i386 arch is enabled manually). Feel free to open a bug asking to document all of that because it's confusing indeed. I am sorry, this is not confusing, this is simply mispackaged. The
