A-Ha!
The problem seems to be connected to the Raleigh theme (xfce default?),
as with Adwaita text selection is indeed white on blue ground. Funny
that this problem only occurs with evince, text selection in any other
program (qt5 / gtk) works fine.

Could you please still reproduce this issue with newer evince version
like 3.14.1-1 ?
If so, could you also provide a pdf file example ?
