With 'cupsctl --debug-logging' it can be seen that argv[5] in an error_log contains 'nolandscape' when a PDF or PostScript file is printed with the Landscape option selected. In principle no rotation of any page takes place. Fortunately, if CUPS uses the pdftopdf filter (which it would with a PDF) the default pdfAutoRotate kicks in and rotates landscape (width > height) PDF pages by 90 degrees. Probably no harm is done and the user will notice nothing untoward. However, a Postscript file sent to a PostScript printer might end up using the pstops filter, which produces no autorotation. A user is very likely to be dissatisfied with the outcome. Selecting the Landscape option should send 'landscape' to CUPS. Regards, Brian.
