When I install krb5-kdc, it logs to syslog not to /var/log/krb5kdc.log.
Where in the files installed by the krb5-kdc package are you seeing
configuration to install to /var/log/krb5kdc.log.
I agree upstream configures (or in some cases recommends configuring)
things that way, but I'm not

The default log location for krb5-kdc is /var/log/krb5kdc.log . E.g.
using the kdc.conf.template supplied with the package would cause krb5kdc
to log to /var/log/krb5kdc.log
