also, I think that for xdg-open to behave, we'd also have to append:
MimeType=application/pdf;
to /usr/share/applications/org.pwmt.zathura.desktop
so that

+1 on this. Just stepped into this problem when a PDF was suddenly
opened with, of all crazy options, libreoffice.
I ended up dumping the following into mime/p

Dear Maintainer,
it would be great if you added /usr/lib/mime/packages/zathura just
like /usr/lib/mime/packages/mupdf. That would allow to change the
order of entries for zathura in /etc/mailcap just by adding
zathura:application/pdf
to /etc/
