Simple workaround: Don't use the Gnome-Buttons, just open a Terminal and use
systemctl suspend
Works perfect here. But I still hope this will be fixed with at least a choice of how long suspend will hold until hibernate.

Possible inconsistent behaviour: I noticed that suspend-then-hibernate
happens only with automatic suspend (i.e. after one hour). If I suspend
manually (ALT key then click on the top right menu) I get suspension to RAM
only.
