I looked at the latest maven version (3.8.5 at the time of this writing)
to see how much work it would require and any blockers I might run into.
I found the following:
1. I started with unpacking maven 3.8.5, moving over the debian package,
adding new version number in changelog and running a
Package: maven
Version: 3.6.3-5
Severity: wishlist

Dear Maintainer,
version 3.8.1 was released in April and 3.8.2 has been available since early
August. Now that Bullseye is released, would it be possible to package the new
version?
