Okay, I think I figured this out. By using e2label I labeled the usb device, changed the permissions and it appears that each time the stick is plugged in / mounted that these permissions are retained. However, this certainly is still an issue for those w/out a label, using the default uuid... It's just not an issue for me no longer :)
