I have a related question: instead of us breaking what is working by updating
the kernel regularly, why don't we find a good working kernel version and move
on only when we can match that in terms of functionality? Is there some
"requirement" to always feature the latest kernel?

ffmpeg seems to work (I tried converting an avi video to mkv and worked).
I tried to compile source from here
https://sourceforge.net/projects/minidlna/files/minidlna/1.3.0/minidlna-1.3.0.tar.gz/download
but with no luck.
Switched to Gerbera.
