Since upgrading a few days ago, I'm getting the original behaviour (only
bell sound and only if window and button sounds are enabled). It
doesn't use the freedesktop sound theme anymore. Interestingly,
disabling the patch also doesn't make it work.

This seems to have recently broken on natty: gdm starts up, but ignores
keyboard input, so I cannot log in.
lsusb shows that the keyboard is attached. A usb mouse plugged into the
keyboard moves the pointer around. Xorg.0.log shows that the keyboar
I have this problem in Chrome, where it covers up the bottom arrow on
the scrollbar.
Also, I'm presently running the XMonad window manager, so the grip
doesn't work anyway. So I would really appreciate an option to remove
the grip from everything.

If you open a guest session and try to run evolution and connect to your
email, does it work? If so, it may indicate there's a problem with the
configuration files for evolution in your home directory.
I think it's worth trying to switch the theme to use a different icon
