The same always happens to me when the system does not register key-
strokes from my Apple bluetooth keyboard after a system restart.
Keyboard appears as connected in the bluetooth setting, but no
keystrokes come through. syslog fills with these errors.

That sounds like a different bug.
The cause of this bug appears to be related to your HDMI monitor not
having a current mode set. Although it does list a 'preferred' mode.
That much is clear in the xrandr output.
Failing to set a current mode is most likely a bug in 'libmutter'.

I read about a bug similar to this affecting mutter 3.34,but said that
they can see the poi ter in the second screen. In this case my monitor
falls in no-signal after a few seconds of trying to get the correct
mode.

I hope I was wrong thinking that this might be caused by the desktop-
icons extension. Please start by uninstalling all extensions except
those three that are shipped with Ubuntu.

authors of the extensions to keep them up to date upstream. And in the
Ubuntu archive it's up to anyone interested to update them, using the

since Focal release in April 2020. Theses are the ones that I know:

gnome-shell-extension-onboard → got removed in Debian on 2020-01-09
because of incompatibility with
it's confirmed but low priority, it's cosmetic and not impacting the
default layout
