This bug still persists in Ubuntu 12.04, it is very annoying; only
remedy so far is closing and reopening nautilus. After some time (or
open tabs?) the greyed out fields return.

agree, very annoying bug!
my ubuntu version: 12.04 beta x, 64 bit;
my presumption (hypothesis): only happens when multiple nautilus tabs (3) are
open in the same window.
