"Steam Installer" not available in Software
Another possible solution could be to revert the Steam Installer
AppStream file changes completely (keep just the http/https changes and
appdata/metainfo file rename). The .desktop suffix in tag is not
used anymore and the stock icon type is not good according to the
appstream-util validator, but
(I am not sure about the .desktop suffix in tag and the tag,
but these should not be an issue in my opinion.)

I think I have found what caused the issue.
This is a diff between the old and new AppStream metadata file from
steam-installer package:
