As I understand it's not a Evolution bug, but a theme bug, already fixed
in the new theme version, so no up-streaming is required.

Have had the same bug with DarkRoom theme, but at the end it was a theme issue.
For the reference, offending line in the DarkRoom file is:
...
widget_class *Mail* style murrine-panel
...
This line overwrites every widget with Mail in name, the evolution mail
This bug is an upstream one and it would be quite helpful if somebody
experiencing it could send the bug the to the people writing the
software. You can learn more about how to do this for various upstreams

Don' think so. There are certain applications in Ubuntu that have their
own logic of displaying menus and items (e.g. firefox or open office)
and don't completely obey to the theme rules. However, the change is
always unform, can't vary from menu to menu, from page to page. This is
not the case

I forgot to add - it affects Mail Preferences only. Other (contact,
mail accounts, etc.) look ok.
