Tom, I'm sure you didn't need to uninstall/install Gimp. Just by
restarting the PC this issues are solved.

I had this same problem.
I tried two things :
1) uninstall gimp with Ubuntu Software Center, and reinstall = gimp
still did not show in the Application/Graphics menu
2) restart PC = gimp showed up in the Application/Graphics menu
not sure if a restart without the uninstall/install would have wo
Erlenmayr, have you check 'System-->Preferences-->Main Menu'? Look at
'Graphics' and see if 'Gimp' check box is activated.

of course i have installed it.
i have installed it and it did not appear. i can start it by typing
"gimp" in some command line shell.
