the issue is "XDG_TEMPLATES_DIR="$HOME/Documents""
the templates directory is used to build the context menu "create a new
document" in nautilus, if you set it to Documents it will read through
everything there and try to build a menu listing everything you store
under Documents, no wonder it's us

The same problem happens at login: as soon as I log in into a GNOME
session, nautilus starts using 100% of the CPU and reading furiously
from the disk. Thankfully, in this case, that lasts only for two or
three minutes.
