Apologies, I'll clarify - when the mouse cursor transitions to Chromium,
the theme changes _and_ the pointer becomes tiny (as in the gif I
linked).
It's worth noting that I'm on a HiDPI laptop (4k screen) with 200%
scaling enabled.

I can confirm this is a problem in 20.10 as well. Pipewire 0.3 is
available but apps (eg Chromium via snap and Chrome via deb) cannot
acquire outputs to share with the error Claudio pasted above.

Confirming using those steps on focal
- create a new document in writer and save it
- do file -> digital signature -> digital signature -> signing document
- the dialog lists no key
it correctly lists the key after doing
$ sudo aa-complain usr.lib.libreoffice.program.soffice.bin
