You can get some washed-out colours, but not the previous gameplay
behaviour, by using dconf-editor to set org.gnome.mines.theme to
"classic". The Gnome devs even show the old version on their project
page. The new version is just terrible.

Select Shut Down... from Gnome Panel menu. Select Cancel on the
subsequent dialogue.
