Thanks. Although system memory is perfectly healthy and there's no
obvious leak in gnome-shell, I suspect the problem here might be a leak
of GPU memory/resources (which won't show up in 'ps')
Are you able to find some Nvidia tools to report GPU memory usage?

The attached photo has memory utilization data on the Nivida GPU on
typical use. I'll try to figure out how to force the problem on demand.
I believe its related to an application I'm using, however the problem
has not returned and I've updated the driver a few times already.
