I eventually figured out that the control bar for my external speaker
had been turned off somehow in the process. I turned it on and it has
worked fine since.

Sorry, forgot to add that the device appears in the Sound settings
correctly and the integrated microphone is working too. There's just no
sound coming out of the speaker.

Same here, I was using Ubuntu 23.10 for a while, and on day my headset
started behaving weirdly, I didn't installed anything.
When trying to troubleshoot, I noticed that I had audio working when
choosing Handsfree mode, that's mono audio with mic input for my
Senheiser HD BT40, but it doesn't work
Same thing happening with Lenovo Legion Pro 7 Gen 6
The sound with the integrated sound card has disappeared, however it's working
over HDMI and Bluetooth.

Same thing is happening here with an Asus Z790. It was working properly
on 23.04. Not on 23.10 the sound works like this:
HiFi 2.0 - Very low sound. I have to crank the sound to max to barely hear it.
HiFi 5.1 - Only the front ones sound (but they sound around 60% when the volume
is at 100%, mean

I tried that, but wasn't given the option for "Play HiFi quality Music". Pro
Audio was the only option in the drop down menu. There were some Analog Stereo
options, but they were all unplugged and unavailable.
Any other suggestions?

I had same issue.
I managed to fix it with pavucontrol (in "configuration" tab I changed Profile
to "Play HiFi quality Music" (earlier it was "Pro Audio").
