The issue that you reported is one that should be reproducible with the live environment of the Desktop CD of the stable release - Oneiric Ocelot. I used to change files on my server through an SFTP connection. When I open a symbolic link, then change it and save, it creates me a copy of that file, applying the changes to the linked one.
