In newer versions of lightdm there is a guest-session option in the
config. Otherwise you should set your default session to the one you
prefer.

Thank you for your bug report, that's not really a bug and not specific
to the guest session, the same would probably happen for new users, if
you remove the default session you should probably tweak your config to
point to another session, why would lightdm pick gnome-shell over gnome
classic or K
