I'm installing all necessary software including KMS at clean Ubuntu 20.04

This is expected :)
and then updated to

I would recommend using one of the pre-compiled (or you compile your own)
docker images of Kurento/KMS. Much easier to upgrade/downgrade KMS versions.

As a follow up, I did do-release-upgrade for the 18.04 LTS om server, to
20.04 LTS however, kurento failed to start (6.8.0) and then updated to
(7.0.0) which failed to start as well, then I deleted kurento using
aptitude, and was not able to install. I will keep
trying/debugging/fixing and let

I'm afraid the minimum KMS version for latest builds is 6.18.0
You need to upgrade your KMS
