One more question: does anyone know of a good place to buy an adapter
for this? I gather I want a 3.5mm OMTP to CTIA adapter, but all of the
places I've seen online that sell these look rather untrustworthy.

The issue you are experiencing has never manifested on my device, and
I've used headphones that I've soldered myself as well as using the
audio port to connect to my car stereo. With this in mind, it may be
that there is an issue with your device.
