However, I notice that it uses \n as line terminators instead of
the canonical \r\n required by the MIME RFCs.
I assume canonical encodings is what's required here ???

You'll have to assign a configuration file to the bearerbox. You already
have couple of sample conf files (wapkannel.conf and smskannel.conf) with
your kannel. The format is:
If you are already inthe 'gw' directory
./bearebox wapkannel.conf (where wapkannel is your config file)
After
