As far as I know uDig and GeoServer mentors are on the list; I belive
OpenJUMP is as well. Chances are if it is not
in this support capacity at this point in time.

Ah here I was getting my mailing lists confused; was thinking this was
the SoC list. As I understand it GeoServer has a foundation already, and
uDig is waiting on GeoTools incubation to show the process has merit.
