Synctoy before so I will investigate that method but in sound like I
should get away with a straight drag and drop, initially I will
probably try that and see how I get on when I drop the second directory
on the drive.

Like the others said, you should be able to just drag and drop. The
only conflicts will be where you have the same full pathname.
Doing your backups, though, may prove difficult once you have
everything in a single large folder. I assume you'll be clearing the
two 500 GB drives at some point to
My suggestion is to keep the two 500 gb "sources" separate and
identifiable on your new large drive, to simplify backups and
identification.
If you have windows, I'll assume you're comfortable with windows
explorer (to make new directories and move files, not internet explorer
that is the web bro
Peter's right, just copy the whole tree from both drives on to the 1Tb.
It'll only fall over where folders have the same path and file names in
them, but that shouldn't be the case, yes? EDIT: even then it'll ask
you what to do
And of course, as you've got the 2 drives as your source, you can't
Do a Google search for Synctoy.
It is a freebie from Microsoft originally designed to keep digital
photo albums in sync.
It works well, allows you to preview what would be copied.
