I used to use the flac2mp3 script and liked it. Then I tried dbPoweramp
for ripping instead of EAC and it greatly simplified my ripping
workflow. dbPoweramps batch converter will also max out my quad core
box with four encoding threads too :)

You could rip to FLAC and then run the flac2mp3 script (a search of the
forums shoud find it) to produce a mirror of your library in mp3, if
you live with mp3 rather than aac?

What quite a few people do is just keep two copies of their music.
I rip to Flac using dbPoweramp, correct tags and artwork it misses with
Tag&Rename then batch convert everything to MP3 using dbPoweramps batch
converter.
