SlimServer will handle the conversions for you once the required
software is installed.
(you won't be able to fast-forward or rewind though)

LAME. There are also GUI front-ends and it's
controllable from certain rippers, also like LAME.

However, its MP3 encoder is on a 30-day license,
so it's not free.
But once you rip in FLAC you can convert to MP3
using lots of other free programs - foobar2000,
for example.
