Selection menu
Go into Tools Selection Font Language (you may have to download
additional dictionaries, but they are available). Once you have added
Spanish, it will always show up in your list. (I work with English,
French, German and Hungarian).

you can select the language to use for a particular selection with
the handy menu available at Tools = Language = For Selection.
Problem is: this menu seems to only ever show 2
