Bookworm and 2.3 isn't supposed by Dovecot themselves. Bookworm support will be
added in 2.4, which is (hopefully) coming before end of year.

In fact https://repo.dovecot.org/ce-2.3-latest/debian/ does not provide
bookworm. Any ideas?
