Answering my own question it can be done by modifying lines 70-77 of
webapps\jspui\home.jsp for each language. Of course you need to specify
an image (use folder \images to store)

I have a similar problem. After the upgrage from 3.1 to 4.2 I copied all
the webapps in Tomcat installation folder. I use jspui but, when in the
webapps folder exist xmlui, sword and swordv2, Tomcat becomes
unresponsive, does not restart or stop (only kill process) and jspui

I have installed DSpace 4.2 through upgrade from 3.1 and also with a
fresh install. Both times when I copied the webapps inside Tomcat
