@joecarey, That gray/difficult to read icon is with the non-default icon
theme (Numix in my case). I checked and ubuntu-mono doesn't have this
problem (both icons use white background). Consider advising the Numix
Project about this.

ubuntu-desktop is a metapackage which depends on the default Ubuntu
desktop (unity, unity lens, indicators, etc, etc). It is not a bug that
it will be removed if you remove Unity, since only makes sense for it be
installed if all its dependencies are installed.
