Sounds like kit-building isn't for you.
QRPLabs kits are some of the finest, best-value kits in amateur radio. As
an experienced kit builder, I give them a ringing endorsement.

For myself, in relation to the KX3, I would appreciate an accurate clock so
that I could just grab and go knowing the time is correct without having to
check and reset. Especially important in portable operation, SOTA, etc.,
where one is often logging on paper. It's nice to keep the clock onscreen
Size will depend on how many accessories/batteries, etc. you want to also
put inside, but I have a Pelican Storm iM2050 which is very well made and
not expensive. With the heat sink installed, you may wish to bump up to the
next size over what I have if you plan on putting in any additional stuff.

I've found this noise on mine was mainly limited to the higher bands 10 &
6m. The RX SHFT set to 8.0 pretty much eliminates the noise, but if I
recall this also disables the roofing filter, which is a bit of a bummer.

Recent uptick in 6m activity recently gave me my first chance to really
spend time on that band with the KX3. I found, even with the VFO NR
enabled, the vfo encoder noise was very bothersome, especially when surfing
the band for weak signals. I've noticed it occasionally on other bands
(mainly 10m
FWIW, I purchased one of these which seems to work OK.
